Happy Monday! I am going to start monday off with a tradition that I would like to continue every Monday  going forward. I think most of us are just a little bummed on Mondays-being the start of another work week and having our weekend behind us. I would like to bring about MEMORY MONDAYS. Each monday I am going to share a picture (or 2) of a memory I have from this picture, from my past so here goes!

This is a picture of me and my brother (2 years older than I) when we were about 6 and 8. This picture was taken in Cape Cod, where when we were growing up, spent each and every summer until we got old enough to go to our beloved overnight camp. Cape Cod holds such a dear place in my heart, and we still have a house which my parents basically spend the entire summer at. We travel there every so often and everytime I go over that bridge I get a tingly feeling and it brings back such care free, amazing memories. This was taken at  ’our’ beach, Dowses. Don’t you just love my stylish polka dots?

This picture was taken at our overnight camp, Camp Tevya  when I was 16 and he was 18.  THis camp holds such a special place in our hearts as well. I started going when I was going into 6th grade and continued for 10 years! every summer for 10 years, we packed up the car and were brought to Brookline, NH (only about an hour away) and this is where we spent each summer. I was a camper for 6 years and a counselor for 4 (Athletic Director for 2 of those years) This place was a haven for me and I cannot even describe the amazing friendships I still have to this day from camp. I will cherish Camp and my Camp friends, always.
—–
Did any of you attend overnight camp? Did you fall in love or was it not for you? if you didn’t attend camp, did you spend your summers somewhere special like Cape Cod?
—————–
I must share my dinner from last night. Jason and I have declared that Sundays be pizza night! They are so easy to make and delicious (and healthy)

Mine is the left (low carb wrap) Jasons on the right (Boboli)

Pre cooked veggies
Post cooked veggies
Tah dah! Mine was sauce, cheese, veggies and grilled chicken
His was sauce, cheese, veggies and pepperoni
I made a yummy salad for us as well. Romaine+red peppers+tomato+dried cranberries+cuke+sliced grapes

we also lit a fire. This is me taking over the fire duty!
—————–
Today, I had work at 5am. The good thing about this is I am done for the day around 12:30-1. TOday I teach a body sculpt class at 12. So I am done at 12:45. Class went really well! I incorporated some new moves which the class loved! I love seeing them improve and have proper form. It shows I am really getting through to them about the importance of form and breathing
I grabbed a treadmill at around 6:15 and hit the deck for a 4.2 mile run. I love this distance. Jason asked why I always run this distance, why not 2 or 3? I responded saying this was my “ZONE” distance in which I feel awesome when I hit that 4 mile mark. I could keep going for 5, but I stop around 4 because it is there that I feel great!
Do any of you have a zone distance??

at around 8:30 I dug into breakfast. 1/2 C oats, chia, 1/2 banana, truvia packet, cinnamon, frozen berries

and this star player, which I keep at work. I try to take a portion out so I am not eating out of the jar, we all know what happens when we eat out of the jar!

MMMM….Love the creamy and crunchiness of Crazy Richards
Shorty after some work and chugging about 2-32 oz’s of water (I was quite thirsty this morning!) I snacked on this before teaching class

Pumpkin + Plain Chobani + 1/2 C Kashi Go Lean= perfection!

and a perfect Honeycrisp Apple! (my favorite kind!)
Lunch was eaten very quickly after I came home, and now I am just digesting…
I went into my fridge and decided to snap some shots of what a normal day in my fridge looks like!

always, at least 2! THere is also the unpictured Peanutbutter hummus and another garlic lovers hummus from TJ’s.

Yes, we eat a lot of egg’s! These are so convenient to have on hand! (yes, that is French Vanilla Silk creamer sticking out in the left hand corner)

LOTS of fruit, always. This is not all of it either! we have about 10 bananas, cut up watermelon and tons of frozen berries and mango. I am so happy its clementine season!
OK, now its LUNCH TIME

the outards
  • 1 Josephs Lavash wrap
  • low sodium turkey breast
  • baby spinach
  • tomatoes
  • sprouts (LOVE!)
  • Peanut butter hummus

the innards

salad made with baby spinach, broccoli slaw, red peppers, cuke with Foods Alive Mexican Harvest flax crackers crushed on top. It was drizzled in balsamic glaze.
I am off to the gym for some weight training. Normally I see my trainer today, but he had another appointment which he could not get out of! I am so sad, but I will still be doing his program and just downloaded some new tunes to get me going!
  • Bad Romance-Lady Gaga
  • Replay-IYAZ
  • Do you remember-Jay Sean Ft. Sean Paul
  • For your Entertainment-Adam Lambert
  • I will be here-Tiesto
  • Hell of a life-T.I
What song are you currently listening to?

XOXO
Naomi

Well Bloggies happy SATURDAY! It is one rainy, gloomy day here in Boston. It is easy to get down in the dumps on these gloomy days, but like I had said before, despite the weather I try to stay positive and upbeat and don’t let the weather get to me so much! AND its a great day for blogging with a delicious cappucino under a cozy blanket (which I may or may not be doing right this moment)

I will start off with a LONG overdue product review. I received these Dr. Krackers  before my trip and snapped shots, as well as tried them, but I didn’t have time to post it, so here it is

A little history:
Inspired by the delicious traditional flatbreads of Germany, our Dr. Kracker crackers are made with a blend of nature’s best organic whole grains and seeds, then yeast-raised and artisan-baked to perfect crispness.

Our Flatbreads and Snacker Krackers are 100% percent natural, and USDA certified organic. We bake with whole grains and seeds, and none of our crackers contain trans fats. From Pumpkin Cheddar to Seedlander, there’s a seriously delicious Dr. Kracker for everyone in your family.

The goods.
  • Apple Crisps
  • Seedlander
  • Hummus Maximus
  • Klassic 3 seed
  • Cherry Semolina
  • Pumpkin Chedder
  • SUnflower Chedder
  • Seeded Spelt
  • Fire Roasted crisps
Ingredients: organic whole grain spelt flour, organic pumpkin seeds, organic millet, organic agave syrup, organic sesame seeds, organic spelt bran, organic molasses, organic flaxseeds, organic poppy seeds, yeast, sea salt, organic barley malt syrup

Large seeds including poppy, sunflower, pumpkin and sesame

Paired with some delicious gouda cheese.
I LOVED these crackers. They were so nutty and noticibly thicker than your average cracker. They didn’t break apart like others and held their shape well! I also loved these because they were not salty 1 bit. It frustrates me when crackers are too salty, and these were perfect. I loved the texture of all the different seeds on the crunchy craker itself. 8.5/10

Thursday night I decided to make homemade greek yogurt inspired by Tay.
I purchased some plain yogurt a la Stonyfield
I put in in a colainder which was lined with paper towel
let it sit for 24 hours and VOILA!

It didn’t taste exactly like Chobani or Fage, but it became noticeably thicker and creamier!

This was all the liquid (whey) that was strained out.

——————–
Friday started off with an awesome spin class at 9:00am before I had work at 11:30. It as amazing. I am seriously in love with the instructor. As a spinning instructor myself, she is my role model. She has amazing energy and such motivation as she teaches. Not to mention her music is awesome!

I made this smoothie after class and drank it on my way to work
These

Scoop of this
=
This (plus some almond milk and skim milk. Delicious, cool and refreshing
I didn’t snap a picture of my lunch because it was the same old boring wrap and salad that I normally eat.
But I was so excited to munch on this beauty! One reason I DO love the winter!

Clementines!

He was happy it was Friday, like me!

I also broke into these. Kay’s Natural Butter Twists

Golden, buttery and delicious! I loved the little pretzel’s. They were the perfect size to throw on this

Chobani plain yog, 1/3 C pumpkin and pumpin pie spice= pumpkin yog with golden buttery twists

mmm Perfection
Later on I munched on these

Yes, this is hummus…But it is not any hummus

Dessert Hummus- PEANUT BUTTER HUMMUS
I got two free container samples of this hummus at the Boston Vegetarian food festival, I chose the PB and maple walnut flavors. The ingredients are all natural and include chickpeas, evaporate cane juice, peanut butter, safflower oil, peanut butter extract.
It was delicious. Smooth and creamy. It didn’t taste like PB you would eat out of the jar but there was certainly a PB flavor in there! I was thinking of all the concoctions I could use this hummus with in my head!
This morning I woke up and made a great bowl of oats!

with 1/2 banana, blueberries, strawberries, water and walnuts

Cafe Britt French Pressed coffee with skim
Jason made his famous Belgium waffle with syrup, strawberries and whipped cream
Jason and I always tend to eat different things, especially for breakfast!
Do you and your significant other, or parents (if you live with them) eat different things when you prepare meals? Do you Think you have motivated your significant other or parents to eat healthier?
I went to the gym for a great workout!
  • 20 minutes on the step mill (the BIG stairs
  • ab circut (ball roll outs, reverse crunches, russian twists, pike on the stability ball, full sit ups with 6lb med ball
  • Weight circuit (reverse fly, squat with a med ball toss, backwards lunges with 15 lb body bar, tricep rope extensions, cable backrow in lunge position, squat w/ a bicep curl on cable machine) x2
I then, came home and put together this Post workout treat!
1/2 C cottage cheese, 1/2 C Kashi Go lean, 4 cut up strawberries, cinnamon…mmmm
After a shower and blow dry it was lunch time!

Salad with Foods Alive Italian zest flax crackers and balsamic glaze.

Josephs lavash wrap with fresh roasted turkey tomato, lettuce and Peanut butter hummus! (honey mustard to dip) WOW, I loved the use of the peanut butter hummus in this wrap! it was sooo good and sweet!

I went to Forever 21 (did snag 3 cute items! two tops and 1 flannel dress) and now I am back at Jasons. We are going to dinner tonight with his brother, sister and brothers fiance. It should be a fun time! i have no idea where we are going yet!

What are you all today this lovely Saturday?? I want to hear exciting things!!!

xoxo

Costa Rica Parte Dos

First don’t forget to update your readers if you have not already done so!

http://feeds.feedburner.com/onefitfoodie

HOLA! Here it is my loves, PART 2!! First are pictures of the Cafe Britt Coffee Tour which is my Uncle’s (now he passed it down to my oldest cousin) Well, lets say, their family bizz. It is such a fun tour filled with education and lots of samples! The second part is the actual wedding!

We were greeted with samples of their newest cold drink, it is a cold cappucino that is sold in stores all over (similar to the cold starbucks drinks in the cold case) but MUCH better. It was sweet, cold and creamy. The perfect amount for me!

These are coffee beans! (yes inside there are the coffee beans) before they are roasted of course

The berry becomes red like a cranberry then thats they are picked at PEAK ripeness and inside are 2 unroasted seeds!

Then are are brought to the roasting plant

and eventually made into this beauty! We each had a cappucino at the end of the tour at lunch. it was the most gorgeous thing I have ever seen!

Lunch was an amazing buffett of fresh, local ingredients. I made a huge salad with grilled chicken, cabbage salad on top and a pickled mustard dressing.

also had some extra cabbage and cukes on the side to dip in the costa rican hot sauce

These are the hot sauces. I love the little hats on them!

That was my favorite. I tried to bring it home but they don’t allow liquids ON the flight from the outside. GRRR I will have to have my uncle send me some!

Thats my uncle giving a talk about the coffee in the gift shop

more samples of chocolate covered goodies in the gift shop

mmm…these were my favorite

It ended with a taste of Coffee Liquor. YUM! I would put this in my coffee everyday sometimes!
WEDDING

The happy couple. The bridesmaid dresses were each a different solid color. The girl in the yellow is my other cousin.

YAY. I loved her dress so simple and beautiful

The inside dancing room had these great comfy lounge-like couches

The food was all passed, meaning lots of things on skewers and food you can carry around

There it is! my favorite was the veggie and chicken skewers
Started with a trio of hummus, tzaziki and babaganoush

Straight to the hummus

Marlin Ceviche! Yes, Marlin. Ceviche is fish that is cooked from the natural juices that is it marinated in such as lemon and garlic. This was delicious! My first try at marlin!

THese were SO good! I think I had 10 of them! I mean, they are only 4 pieces on each one!

Ceviche of shrimp, with mangoes and roasted red peppers. SO good, this may have won my heart over the marlin because of the addition of mangoes

at around 11pm, everyone gathered outside for a show! No one knew they were even there! They made music just using those trashcans that you see in the back and had a “STOMP” like feel. They were amazing!

Again, in action
AND THATS ALL MY PICTURES! Sorry I didn’t capture everything, I tried but it was hard to carry my camera around the whole night.
QUESTION: What is your favorite part of a wedding? Is it the dancing, or food, or open bar. Delicious drinks, or watching the bride and groom in their happiness? I think that was my favorite part!

I had to snap this shot

Plane ride home. It was a Costa Rican inspired meal. I did not touch one bite, but Jason LOVED it. He even ate some of my rice and beans! (That pineapple “thing”) was making me quite nauseous!
Ok, back to normal blogging tomorrow

xoxo have a great Thursday!

Well here they are…Part 1 pics of my trip! Just some quick background. My uncle (mom’s brother) owns a coffee company in CR called Cafe Britt . It is amazing coffee and I encourage you to check out the website! My aunt (who is French) and my uncle raised their 5 kids in CR, so my family and I grew up going there and visiting all different parts of the country! You could call this a destination wedding in a sense because it is for many of the guests, but for my cousins and family there, it is simply a wedding!
Day 1 and 2
Arrival at The Tabacon Grand Springs Resort which is located at the base of one of the 3 active volcanos in CR, called Arenal. This hotel or ‘resort’ was INSANE. after the flight we had a 3 hour drive to reach this destination. It is so serene. There is another part of the resort with over 10 natural hot springs

my dad at one of the natural hot springs.

More hot springs

We were greeted with these fruity drinks!

some sort of passionfruit combonation. Very sweet but delicious!

we also munched on these on the bus ride up to the resort

Mine and Jason’s BIG bed

we were greeted with this fresh fruit, as for being part of the wedding! DO you see that wierd looking fruit? That is called a granadilla . They have a very sweet-tart fresh flavor and are known worldwide being a dessert on their own! The fruit is usually cracked open and the pulp and seeds are consumed out-of-hand. When used at the table the fruit is cut in half and the contents are eaten with a spoon. The Granadilla is well known for its digestive properties.

The inside pulp of a granadilla

We also had these chocolate covered coffee beans from my Uncle’s company waiting for us in our rooms

The next morning we woke up and took a nice walk before breakfast.

my artistic side :)

Hot tub part of the pool area

Sign at the hot springs!

By the time it we reached the breakfast area we were so hungry! The breakfast buffet was INSANE

beautiful Breakfast area

I made an eggwhite omelet with spinach, tomatoes, peppers and cheese at the omelet station

A natural yogurt with sliced banana’s, amazing granola, raisins and peanuts(those were in the granola)

French Pressed Cafe Britt

I was so proud of my brother plate! he made it so blog worthy for me! this is Rice and Beans (traditional Costa Rican dish) with fresh pinapple

That is the water I lugged around in my bag!

After we ate, we got ready to go on a hanging bridge, mini hike! This was a hike through parts of the rainforest with many hanging bridges

such as these

and this

view from the top

Fun pic in one of the tunnels of me and my brothers GF

some of us at the top

I had a chance to munch on this during my hike. It was my first time with this flavor and AMAZING. I loved this! The Luna White Chocolate Macadamia Nut bar. By far one of my top 3 Luna bar flavors ! It had a nutty and sweet flavor that complemented each other in the most perfect way. I really think Luna has done a great job improving their bars! It also has 9g protein and 3g of fiber so it did the perfect job of curbing my hunger until lunch time

It had a layer of white chocolate on the outside as well, that in this picture was a bit melty but it was delicious!

Along the path we saw these crazy ants carrying leaves…hundreds and hundreds of them! it reminded me of the movie ANTZ. They were so organized, making one line bringing leaves and on the other side were the ants who had just dropped off their ‘goods’

Lunch was much needed to refuel us! We ate at the onsite hike restaurant. I got grilled chicken with rice and beans (obviously!) and a green salad with hearts of palm and a great dressing that tasted like salsa!

My brothers Lunch. THis was a traditional Costa Rican Dish…hey, when in Rome, Right? It had a grilled plantain (on the left) white rice and beans, homemade cheese, macaroni salad (thought this was a bit random) chicken with peppers and onions and a green salad.

Look familiar? I saw these on the table!! It was stevia…in spanish of course

That night was dinner at another hot springs resort where we spent about 5 hours splashing around and then having an amazing dinner. My camera did not take part in these festivities.

Day 3 (Friday)
Dinner was at my uncle and aunts house and it was amazing! it was so nice to be with my family and also meet the brides family. She is originally from Massachusetts as well so LOTS of Boston folks were there which was nice!

Shot of the tables set up in my Uncle and Aunt’s house

Place cards

Sample of what was for dinner! And in english terms..I took pics!

First up was a lobster patte. This was interesting. It was served with a spinach pesto and roasted red pepper jelly. The lobster patte itself was delicious! for someone who doesn’t like lobster I enjoyed this very much. It was quite rich so I could not finish the whole thing, but LOVED the pesto and red pepper jelly!

Next up was carrot and squash soup. The presentation was amazing. This soup was delicious. It was warm and buttery and had a peppery flavor. I finished the entire thing! This beat out the patte by FAR!

Stuffed chicken breast, spinach infused rice and i don;t really know what the yellow tower was but it was called “timbale de zanahorias” Zanahorias=carrot…so tower of carrot? whatever it was– it was creamy and delicious!

Looks wierd, but it was amazing! it was stuffed with roasted red pepper and a light cheese.
Dessert was a trio of mousse’s. Pineapple, one with a berry sauce and one with a passion fruit sauce

This was my favorite-I loved the local flavor of the passion fruit sauce. The mousse itself was quite rich, so again I just had a few bites of all 3, but this one took the cake (HA, I crack myself up!)

Dinner ended with a beautiful poured cappuccino (my favorite coffee beverage) I have the most beautiful picture of a cappuccino from the next day when we went on the Cafe Britt Coffee Tour

I was also obsessed with the flower arrangements in the middle of the table!

PIc of the happy couple. Thats my cousin (Jeremy) and his wife (Liza)
———————
Alrightly Bloggies. This would be part 1 of my trip! I have broken it up into 2 parts so Part 2 will be showing tomorrow! then back to my Everyday Eats!

I just enjoyed a delicious wrap for lunch and I am off to the gym!

XOXO

Naomi

QUESTION OF THE DAY: What is your favorite part of traveling to another country? Is it trying the local food, or shopping at the local stores or sight seeing?? I want to know!
WIn this awesome waterbottle at eatcleanlivegreen

IM BACK!!

Yes, I am back!! what a wonderful trip I had. The wedding itself was asolutely amazing. Costa Rica is truly a breath taking place. Everything, every animal, every piece of natural rainforest is picture worthy. I took so many pictures I filled up my camera card’s memory and had to delete some oldies! The first 2 nights we stayed at the base of an active volcano (there are 3 in CR) and it was a resort that had amazing natural hot springs, which were great!! we went white water rafting, canoy zip lining, hikes and more!

I tasted some amazing food including lots of Costa Rican specialties AKA rice and beans or arroz y frijoles! (yeah I brushed up on my espanol!) Of course I took lots of pics as well as drank amazing coffee since my uncle owns a major coffee company there. On saturday we took part in the Cafe Britt tour(name of the company) and I took so many great shots!

I came back late last night and back to work today! I have not have 1 second on my computer to do anything with thte pictures but bear with me! LOTS TO COME!

missed you all!!

xoxo

for now, check out this great giveaway at ‘herlittldogtoo’
and Averies giving away some awesome loot on loveveggiesandyogA

little bit of a crazy day over here. I don’t know why but packing and traveling give me anxiety! It just makes me a bit nervous. I packed up some bars and I also made breakfast (overnight oats) and lunch (turkey wrap with romaine, tomatoes LC wedge)

Some goodies. We have some Larabars, Amazing Grass Bars, Luna Bars and Kashi Granola bars

I have the largest bar stash right now and LOVE it! one of my dad’s friends and his son are staying in our house while we are gone and I hope they don’t break into my stash!

This is my Mom and Dad’s Breakfast (they each have one) Arnold thin with eggwhite and avocado spread.

Ok back to the start of the day! My day started at 5am! The time really does fly by when I have the opening shift. I will look up at the clock and it will already be 6:30 when I feel like I have been there fore 3 minutes. I really do prefer the early morning shift rather than the closing! At 6:30 I hit the treadmill for a 4.5 mile run. I am so loving my early morning runs. They put me in the best mood and I just feel so refreshed and ready for the day! After my run I did some core work (Bosu Crunches, leg lifts, Ball roll outs, Pike on the stability ball) no weights today as I am still sore from my workout with my trainer!

For breakfast I busted out the Crazy Richards PB . I acutally got 2 jars a while back and just haven’t used them yet because I had to get rid of some other PB’s I had and I don’t like to waste!
Crazy Richards Chunky PB
Crazy Richard’s Natural Creamy Peanut Butter is made with no salt, sugar, hydrogenated oils or trans fats. Our only ingredient is 100% USA peanuts. After careful roasting we grind select peanuts to create our delicious and natural peanut butter. We then use a special unique grind that gives our peanut butter its creamy, smooth texture. We do this so that the peanut butter can be stored in the refrigerator without becoming too hard to spread.

Summarizing, our peanut butter is special because of the quality of the peanuts we use, our time-honored roasting process and our unique grinding standards. Finally, it is special because of its sole ingredient – peanuts!

MMMM…. I am a Chunky PB lover, thats for sure!

Close up shot. Sorry about the lighting!

This PB was delicious!! It was not salty at all (duh!, not salt added) and it had the creamiest texture with HUGE chunks of peanuts in there. This made for a delicious bowl of oats

Snack time

Delicious Empire Apple (from NY!) who knew!

Plain greek yog with dollop of pumpkin and pumpkin pie spice

with some Fiber One and Newmans Own Organic Cinnamon Soy crisps (the last of them, so sad)
Lunch

I used the Foods Alive Mexican Harvest flax crackers on my salad

These were Delicious! They tasted very ‘fiesta-y” lots of coriander, onion, garlic, cumin, cayenne pepper, cilantro. Great crunch to my side salad

I also made a great wrap
Josephs Lavash Wrap, LC wedge, Sabra Hummus, Romaine, tomato, turkey breast-all grilled up

After lunch, I went out to do some errands, pedicure, manicure etc…just some last minute things!

Manicurist in Sevilla by OPI

I decided to use some of this that I got last week and make a pumpkin Delight.

I liked this yogurt, didn’t love…it was a bit too sweet and artificial tasting for me, but I did like it and use half the container in my snack. I think I just prefer making my own pumpkin yog using greek yogurt, canned pumpkin and pumpkin pie spice

I recieved a package from Natures Path the other day and I decided to break into one of the 3 boxes of cereals. I will do a full review when I get back from my trip! but for today, I chose to use the Organic Crunchy Maple Sunrise, which is one of their new gluten free cereals

I loved all the textures in this cereal! There were puffs and flakes and little crispies that came together beautifully in my mouth. (TWSS) It was sweet and had a distinct maple flavor which I really enjoyed! Sometimes cereals say they are ‘vanilla’ or ‘almond’ flavored, then you take a bite and although maybe good, it doesn’t boast that flavor that it claims it has. Well, this cereal really does have a sweet maple flavor!
8/10

Greek yogurt, Crunchy Maple Sunrise , frozen raspberries. THis was the perfect post mani/pedi treat! Loved the coldness of the berries with the sweet taste and crunch of the cereal.

INGREDIENTS: Organic whole grain corn meal, organic evaporated cane juice, organic brown rice flour, organic yellow corn flour, organic inulin, organic quinoa puffs, organic maple syrup, organic flax seeds, natural maple flavor, organic buckwheat flour, organic quinoa, sea salt, organic amaranth, organic molasses, tocopherols (natural vitamin E). Produced in a facility that uses peanuts, tree nuts and soy.

Well Bloggies, This is it! My Last post before I head out of the country to sunny COSTA RICA for my cousins wedding! I will miss you all and keep my blog company while I am gone. I didn’t have anytime to get any guest posters… I will be thinking about all of you!

I will be back Sunday Night!

xoxo
Naomi

What a day and what a great package I got in the mail! I will get to that in a bit!

For now, let me show you what my floor looks like pre-packing in my suitcase for my Costa Rican adventure which I leave for on Wednesday!!

Just lots of things…. everywhere…does (or do?) anyone else’s bedroom floor look like this before a vacation?

I am bringing this dress which I will wear probably to my AUnt and Uncle’s house on Friday night to the pre dinner. It is a denim Theory Dress I got this summer.

This dress to the wedding perhaps (it is a Costa Rican casual wedding) French Connection Black Satin Tube top dress. Still not sure about the dress though…

Question time: When you are going to the airport do you bring your meals or do you rely on airports to provide the food?

I ALWAYS bring food with me. We have a 7:30 am flight so I am brining breakfast. I will either make overnight oats the night before, OR bring some instant oats in a bag and when I get to the airport, add hot water…banana and some Justin’s PB  of course too :)

Ok Breakfast this morning, I didn’t snap a shot of but, no worries you are not missing out, it was a typical oats and berries breakkie with peanut butter

I started the day with a 4.2 mile run on the treadmill. I love how the sun is rising earlier! Although I hate how it was dark today at 4:30! still it was nice to run, while watching the sunrise through the large glass windows.

  5. I was born a few hours before April fools day and quite Happy about it!
  6. When I tell an adolescent boy my Name, this their response “Haha, thats I-Moan backwards” I really wish my name spelled something else backward!

WOW. Today was so much fun! My mom and I went to the Boston Vegetarian Food Festival. This was the second day of the event, so I thought that it would be a little less crowded. BOY was this foodie wrong. This place was packed!! It was held at the Reggie Lewis Athletic Center in Roxbury, Ma. It was basically in a big open gymnasium, and it was packed with people! I held my mom’s hand at one point as to not get lost!

First up
PB&Co Peanut butter samples. Yes Please. My mom thought I was crazy for how excited I was for this booth.

Sample of White Chocolate Wonderful. This was delicious! my first go at this flavor!

Some Local Indian Food restaurant giving out some sample (these were 4 dollars a plate) I skipped it

Swag I picked up. (the bar and packets were free. I bought the chocolate superfood)

This next booth was AMAZING. Something I had never seen before. The owners were super nice. I chatted about my blog and they gave me two containers to take home and sample beyond the samples at the booth
These owners are local from New Hampshire. They make all natural dessert hummus with flavors such as pumpkin Pie (AMAZING) maple walnut, chocolate mousse, caramel apple and toasted almond

Peanut butter hummus

My Swag. I got the peanut butter and maple walnut. Seriously. Check out this SITE to see where you can try this hummus. It may change your life.

Whole Foods Quinoa Salad with cashews and Cranberries

This was amazing! Everyone was a little peeved that they would NOT give out the recipe though!

Hemp Bliss Booth.

Vegan veggie burger with vegan bbq sauce

Tofutti Onion dip with a vegan, gluten free rice cracker. This was delicious, a bit rich for me but full of flavor.

New product on the market called Teather . (sorry, you have to turn your head!!)

What makes TeatherTM so unique? lt all begins with certified organic ingredients of exceptional quality. Rather than using refined fruit products, such as concentrates or natural flavors, TeatherTM uses real whole fruits and white tea leaves. Moreover, no filler fruits like apple or pear appear in TeatherTM. Filler fruits only cheapen product quality and degrade flavor. The result of whole fruit and white tea is authentic flavor other products simply can’t match. Seeds, skins and entire flesh of whole fruit also offers unparalled nutritional benefits. These parts of fruits are packed with an impressive assortment of vitamins, minerals, macronutrients and other beneficial phytonutrients, some with impressive antioxidant qualities. White tea leaf, which undergoes less processing than green tea, provides an additional abundant source of phytonutrients.

The owner was SUPER nice. This product has only been on the market for 20 weeks, so look out for it in Whole Foods in the next month!
Strawberry Pom Teather

Ingredients

Teather. This was delicious! you could really taste the white tea flavors in here. The consistency is a nice, chewy texture like a hearty fruit roll up.

Navita’s Natural Booth

Cocoa Nibs

Some goodies dumped out on my counter.

How was your halloween? Mine was just fabulousss….As I said in my last post it was going to be very low key, as my favorite part of this holiday (is this considered a holiday??) hmmm never thought about that! i digress…so as I was saying favorite part is seeing all the little kiddies come to the door dressed in very creative costumes. Last year there was a little boy who was dressed all green and he was “going green” loved him

So Jason and I prepared by getting lots of the good stuff. He insisted on getting candy that was his favorite, just in case there were some left overs

I was looking inside here to make sure I got a good shot of our selection and I found an empty wrapper! Jason decided to ‘try’ some to make sure it was ok, then by mistake put the wrapper back. Oh the horror if a trick or treater picked up an empty wrapper…there would be tears

Sadly, we had 1 lonesome trick or treater…needless to say, Jason is a happy camper with his left overs

Backing up a bit, Friday Night we tried a new Restaurant called Nourish . It is located in Lexington, Ma.
This is a foodie HEAVEN. A little about Nourish: We are a family owned and operated business offering an eclectic menu that ranges from nourishing vegan-friendly dishes to lip smacking carnivore-satisfying plates.  With our dual mission of RESPONSIBLY SOURCED – RESPECTFULLY PRICED we are working with area farms and other small businesses to work as much local and organic food into the menu as possible, while maintaining prices that allow a broad range of people to eat with us.

It’s a challenging concept to pull off, to offer enough different dishes on a menu so that both the person who is looking for some tofu or tempeh AND the person who really doesn’t think dinner is dinner unless there’s meat on the plate can both be satisfied.  To also factor in the importance of pricing so that you offer well-sourced food to a wide range of people and also allow them greater frequency is an additional challenge.  But we’re committed to both.  We’ve watched for years as the mix of vegans, vegetarians and meat-lovers combined in one family, or group of diners grew, and knew that with our two concepts we could bridge that gap so eating out would no longer be about someone making a huge compromise.

If you look closely, you can see the Taboule Chicken: Natural chicken pan-seared and sautéed with taboule, served with hummus, tahini, natural pickles, spicy harif, pita and side house salad.

Chicken with the taboule, hummus, small salad with tahini dressing and pita. This was 9/10. WOW I have never had taboule marinated chicken before! it was delicious. Everything was so fresh and healthy. The hummus was clearly homemade, so creamy

Blurry Hummus picture (sorry!!)
Dinner was fabulous. We went across the street to Rancatores which is a local ice cream joint.
Yes folks, they had Pumpkin Yogurt

Mmmmmm

Then I tried a sample…sadly this was not as I had expected it to be. It was icy, more like pumpkin sorbet, which I just was not feelin’ I wa so sad that this yog didn’t live up to my standards…
I went with Hydrox Yogurt…..mmmmmm HUGE chunks of Hydrox!

Plenty of Toppings!
J got a sundae with vanilla ice cream, butterscotch, heath bar and homemade whipped cream which he was not too into either. It was real homemade, so it wasn’t light and fluffy like the stuff out of the can. Still a delicious treat though!

So back to Saturday. I woke up and hit the gym in the am

Jason and I took our last ride on the motorcyle for the season. We went out for about an hour and a half. it was beautiful! then we went to Kelly’s House of Harley and dropped off his bike for the winter…Sad day :(

I don’t have any crazy Halloween plans, my guess is that Jason and I will take is easy, maybe go out to dinner, hand out candy, no crazy dress up parties this year which I am A-ok with! One of the highlights of my halloween is always seeing the creative costumes that the trick or treaters come up with!

TODAYS EATS

I had work today at 5am…this is one of those days that I work back to back shifts meaning yesterday my shift was 11:30-8, then I go home, prepare food for the next day and literally am in bed by 9 or 9:15. I wake up at 4:15 to be at work to open up the gym at 5.
  •  Many of you asked how I can wake up at 4:15 one day, then 9:00 the next morning? Let me tell you, this was NOT easy when I first started. It messed with my body clock and I was very thrown off. I have been doing this schedule for about 6 months now and I am so used to it, its as if my body knows what to expect so its quite easy! Its crazy how the body can adapt to whatever changes you bring about!
I hopped on the treadmill at 6:30 and ran 4 miles in 36:30! this was great time for me. I tried to do the last mile for speed, keeping it at or above 7.0. I was very happy with this time and it felt awesome! I was chugging along to Basshunter (ahh my techno!) I did some core work and called it a day!

Oats, berries, 1/2 banana, truvia, cinnamon w/ Justins PB drizzled on top… Perfect!
I also enjoyed a Green Mountain Pumpkin Spice coffee!

Snack time

After work, I stopped at Target on the way home. I wanted to pick up some travel size accessories for COSTA RICA. I am so excited but I always get anxious about travel and how much and what to bring before a trip

**Do any of you get anxious about traveling and always start thinking about what you will bring weeks in advance? What are some staples you always bring with you when you travel?**

I always have with me a book, chapstick, hand lotion, hand sanitzer, bars, nuts, dry cereal (not all of it, but make sure I have snacks), my ipod

Goodies from Target!
  • Low Sugar apricot preserves
  • All natural Archer Farms Vanilla Cranberry PB
  • 2 fage yogurts
  • Archer Farms Pumpkin pie yogurt
  • Mojo PB & Jelly Dipped bar
  • Oats
  • I also got a cute top and of course some travel size goodies, (not pictured)
I also got this!
Yes, you have to turn your head, sorry! Pumpkin Pie Spice diffuser!

It already smells amazing! This was taken in my kitchen, but it is certainly for my bedroom

Lunch Time

While I was beginning to think about what to eat I munched on this guy

mmm Carrot. I love big carrots better than baby carrots, They have so much more flavor to them! (IMO)

Are you a baby carrot or large carrot eater?

I also spotted this on the counter, and I was not the one that took the bite from it! (Ahem, mom, Ahem) I believe she took a bite and left it on the counter! Oops!

I decided on a wrap using this French Onion Laughing Cow I have never tried this flavor before!
